Braised Short Ribs

In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs for about 5 minutes per side until browned. Remove and set aside.

In the same pot, add the onion, carrot, and celery. Cook until soft and translucent. Stir in the garlic and cook for another minute.

Stir in the tomato paste, followed by the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for about 3-4 minutes.

Pour in the beef broth and return the short ribs to the pot. Add bay leaves and thyme sprigs, and bring to a gentle simmer.

Cover the pot and transfer to a preheated oven at 325°F (163°C). Braise for 2.5 to 3 hours until the meat is tender and falling off the bone.
